The first thing to remember is that baking mix and cornmeal are not the same thing. Make sure you're using cornmeal, not baking mix. If you're unsure which one you have, check the ingredient list on the package. If there's any mention of "corn" or "cornmeal," it's probably the right stuff!

If your cornbread tastes like cardboard (or if it's too dry), this could be due to a few different reasons:

  • You might have left out an ingredient in your recipe, such as sugar or eggs.
     

  • You didn't let enough time pass between mixing up all your ingredients and actually putting them into the oven those things need some time to get acquainted!
